Seeking ferment

With studies showing the benefits of taking probiotics, Professor Bob Rastall (Food Biosciences) has teamed up with the US Department of Agriculture to see if agricultural waste such as citrus peels could be turned into probiotic food ingredients, the newspaper reports.
